Pistachio, Cranberry and Fig Granola

For a long time we’ve been making our own Granola (i.e. muesli) for breakfast. Overtime we’ve changed or added ingredients as we saw fit and I think we have the recipe pretty perfect now. It’s simple to make and you’ll love the fresh crunch of the first bowl and the awesome smell in your kitchen as it bakes.Granola_Dry

Pistachio, Cranberry and Fig Granola

Dry Ingredients
2 ½ cups Rolled oats
2 ½ cups Rice bubbles
¾ cup LSA*
¾ cup Sunflower seeds
¾ cup Pepitas
½ cup of Macadamias
½ cup Coconut – shredded
½ cup Psyllium husk
½ cup Pistachios – chopped
½ cup Pecans – chopped
¼ cup Chia seeds – optional
1 ½ teaspoons of Cinnamon

Wet Ingredients
50 mls Cocount Oil
50 mls Honey
Few drops of Vanilla extract

½ cup of dried cranberries
¼ cup of dried figs

Combine all dry ingredients in a large bowl and mix well. In a separate small bowl combine the oil, honey and vanilla.
Pour the combined oil, honey and vanilla into the dry ingredients whilst stirring to ensure all the dry mix is coated.
Transfer granola into a large deep baking tray. Bake on a low heat of 160 degrees for 25 minutes, making sure take out of the oven and stir every 8 mins.

Once cooled down add the cranberries and figs.

*LSA stands for linseed, sunflower seed and almonds. LSA usually comes in a fine or coarsely ground form and can be bought ready-made from health food stores and some supermarkets.
